I do wish they had turned him into another “Garak.” A strong reoccurring character that got an occasional storyline. Have him be a klingon who is not about the glories of battle. Who sticks with DS9 when the empire declares war on the federation.
Have him become Sisko’s best non-main cast friend, because they both love cooking, and sharing recipes. And this dude is the only other person on the station who gets it.
Sure he runs a Klingon Cuisine restaurant, but he loves all cuisines. He just wants to teach other cultures how to appreciate the cuisine of his culture.
